Ingredients

4 14 Grains
½ apple, finely chopped (Pink Lady or Gala work best)
½ fennel bulb, finely chopped
½ small shallot, finely chopped
8 oz. poached, roasted, or rotisserie chicken, torn into bite-size pieces
2 tbsp. mayonnaise
1 tbsp. finely chopped fresh chives
1 tbsp. finely chopped fresh tarragon
2 tsp. finely grated lemon zest
1 tbsp. fresh lemon juice, plus more if needed
Kosher salt, freshly ground pepper

How to make

1. Toast Country Harvest™ 14 Grains bagels to preference.
2. Using a fork, mix apple, fennel, shallot, chicken, mayonnaise, chives, tarragon, lemon zest, and 1 tbsp. lemon juice in a medium bowl until well combined. Season with salt, pepper,and more lemon juice, if desired.
3. Divide apple, fennel chicken mix evenly across the 4 bagels and enjoy!
